all I have to say is nom nom nom lol We had gumbo for Christmas. I would take a pic, but it gone! As for the steak, I require a good bit of moo still left in mine. If it does not at least make an attempt to dodge the fork then it is overcooked. I was staying with my Grandmother a year or two back, while hunting, made her happy to stay with her, she informed me that we would be having steak. I was so excited until I cut into it. I ate it all, but it was not easy. That thing was cooked to DEATH!!! I informed her that I would be cooking my own from now on. She patted me on the shoulder and said, "sure sugar, whatever you want." Which meant, uh uh not in my house. She is living with my mom now so I don't have to worry about the drama being played out.

that prime looks good ! i did a dinner about five years ago when i was fund raising for my son's wrestling team i had 48 prime ribs on here at one time it was a real trick to cover all well done ,med,to the still kickin lol!.

Last Summer I was fortunate enough to find an older New Braunfels smoker on Craig's List for $50. These are the same folks who made Oklahoma Joe's smokers and are were made from 1/4 inch steel. I got her home and sanded everything down and applied a new coat of high temp paint, new wood in the front shelf and a couple of mods to the firebox and cooking chamber. I am extremely impressed with how well this thing holds heat and how small of a fire it takes to get it hot! I never knew how much of a pain the cheaper and thinner smokers were until I cooked on this bad boy! I have since bought another one that I plan to modify by turning it into a reverse flow smoker for even better heat distribution.

the fun never ends i have two other bbq"s all treagers one is for this next year it is 12x12 going in the back of my tundera it will be making lunch while tony and i are diggin rock lol!

Yours looks wonderful! I also had standing prime rib for the main course. Mine was so rare it was still bellowing and flopping all over the place. Just perfect! A friend used to order: "Just knock off a horn and drag it over."
