Might work all over the world, IF you could get the bamboo! What I saw in Papua New Guinea Was they just threw chucks of pig in a fire and roasted them a bit. scrapped off the charcoal and had dinner. The smell was overwhelming to say the least. sometimes they would wrap the meat in banana leaves first.

Once full, they beat it with sticks, cook whole hog. eat it, and the rice too. YUK ! Cooking methods and recipes in other worlds fascinating. The bamboo method a favorite with street kitchens in many countries. Mostly curious tourists.

Been cooking fish skin on and not scaling them. Peel skin away and eat. works like a charm.
Makes you wonder if skin was not designed for a wrap when cooking.

It is amazing how many uses there are for bamboo. The scaffolding is pretty amazing too.
In China there is a small fish that the people cook real crispy then eat the whole thing "including the head". I didn't go there but I ate a lot of things I did not want to know what it was. In the ten months I was there I only ate one thing that I did not like and I do not know what it was. They eat one thing there that I will not tell what it is because it is so gross I do not want to make anyone ill. The dog they eat is a special breed that is never a pet. I did not eat any of it that I know of.
When I was a kid and when I was in the military someone was always trying to gross out the others. Would not work at all in China and some other places. Jim

Jim Bamboo scaffolds serious in China. I believe it is a Chow dog that they raise for food, crazy.

I'm told anjing is good.
ChowChow is a fighting dog. Bred to mimic lion.
In Indonesia anjing is any specimen found any where.
I've had "bone cracker" fish. Filet and eat the meat as sushi, they deep fry bones and head and deliver. Delish. The fish is usually Aji. Spanish mackerel up also 'pompano' is used.
