I can't do scrapple. I'm pretty sure it's made out of the scraps on the floor that get swept up along with sawdust. That accounts for the texture. Shamokin is in the antharcite regions of the east, up there with other thriving metropolises like Sunbury, Ashland, and the late Centralia. Of course scrapple comes from the floor scrapings, its that added cellulose that makes it taste so good. LOL My boss's wife is from Sunbury. We go up that way every summer to go to Knoebels Amusement Park. Its our favorite one. Such and old time place. Beautiful country up there. I drove through Centralia 2 years ago. There are still 2 houses standing. I read about the one old lady, she refuses to leave. She is also the one who led the fight against the government buyout back in the 70's. I guess she got what she wanted, a house worth nothing and no neighbors.

I don't know why you guys are not falling over left and right from heart attacks. I've already had one and I'm doing my darndest not to have another one for as long as possible. My wife is amazed that I changed my eating habits so drastically. I told her having a heart attack will get your attention. Curt

I LOVE KNOEBEL'S!! My Mom and Dad met there, at the pool in 1937 or 38. It looks just the same. They've gotten rated first nationally for amusement park food, did you know that, several times?
Think into the nutrition information a little more, since this is eaten cooked and like with bacon or any other fatty pork type meat, a lot of fat cooks out. I'm not sure but what Taylor Ham is even better about releasing fat since it is sliced. I've started putting it in the micro instead of the traditional fry and that makes me feel virtuous since fat comes out but none goes in.
