That's a nice machine, yogi, if the Chinese quality is up to par. I used to have an 8" double wheel belt driven bench grinder that I ran off a half hp 1750 motor at 1:1. It also used 1x8 wheels. The wheels are so heavy that the momentum keeps them from slowing much in use. Quite a bit of energy stored in the spinning mass. Mine worked great on any kind of metal, but I never used it on rock. I suppose Alox wheels are okay to start. When they wear down they can be replaced with SiC. Not sure what a pair of 1x8 SiC wheels runs without doing a bit of searching.

I don't use that type of grinder, but I do run mine at about 1400ish RPM. I like the slower speed. 1725 sounds good. Steve
