At 600F they may be be a little well done. I have eaten at some Florida oyster bars that have done worse.

Cooked about 15 pounds Bill. About 5 % got to hot and fractured so i hit good color.
I gotta cull about 30 percent after tumbling skin off for 3 weeks.

Them are pretty cool looking. Wouldnt of ever known them were oysters. They look super hard.
I like the pics of your dig location. You got a good eye. On that Axe Men show there are river logging crews on withlacoochie(spelling) river. I swear I seen some coral like in some of the pics you have showed off from your trips.

I found this new boat ramp on google earth Brad. Waaaaay back in the woods. It is 10 miles upstream from my honey holes on the Withlacoochee. What you see is 200 cubic feet per second flow. Back in May it was 40,000 cu ft sec. Well it pushed a bunch of old ax logs up. See them laying on the left. After 2 ladies and 3 fellows told me i could and would have to back about 100 feet out in the river to get the boat off the trailer...man...them folks were crazy drunk. I deciphered and made a good call. But i sat in the truck for 5 minutes trying to figure out if they were messin w/me. My axel was past the white sand line.. I went 5 miles downstream and found weird polypy black coral. At mile 4. Past a bunch of those logs. My boat would pull 3 at a time. But no way to trailer them out. That stone in the upper right is algae or death plate. Found a few ice age mammal bones too. The creek is a gold mine. I will hit it hard next time. Size and yellow feet point to Muscovy. Black Belly Whistler doesn't have a black breast.

It's a muscovy. It was brave and tame. Typical. Huge breast meat on them rascals. Taste like filet mignon. Canadian geese too.
