I was conned into smoking an extra for some other vendors in the craft mall where I have my shop. I smoke something or other just about every weekend and everyone lines up when I go in on Tuesdays wanting to know what I brought for samples. I brined them overnight, rinsed and dried them, then rubbed a bit of oil on the skin and sprinkled lightly with lemon pepper. We already cut into ours, and it is ohh so good! Sooooo much better than the stuff you get at the supermarket delis!!!

not much smells better to me than roasting turkey, smoked, it has to be Heavenly!

I just finished a sammich along with some fresh, home grown maters from our garden. I assure you it was sooooooo good!

Low and slow till the meat registers 160? Not real low. I smoked these at 250- 260° to crisp the skin up real nice. I didn't check my watch when I pulled them at 160° IT, but it was between 3- 3 1/2 hours If cooked around the 225° temp, the skin just gets rubbery and not crisp

I'm sure it was fantastic eats. Something about the smoke does wonders. I haven't smoked a turkey breast in many years but did one a few weeks ago and it was really good. Have another in the freezer for when it cools off a bit here.

We used to stuff Cornish game hens, wrap them in foil, and cook on a small Weber when we'd go fishing down at Harbor Island. There was a ritzy restaurant a hundred feet away. Folks would park and have to walk past where we were fishing at to get there. Most had olfactory orgasms as they walked by, lol! Loved teasing those folks!
