Sounds good except for the cilantro. Hate that stuff. 1/8 cup might be tolerable, or sub horse raddish for the cilantro for extra zip.

Similar to cowboy caviar I make. Add some more beans & corn and you've got it.

Drop the cilantro, add horse radish. YES, corn would be a perfect add. Field or cow peas to replace black eyes perhaps. Gator eyes ? Get your black eyed peas from a Florida supplier. NDK, please post Cowboy Cavier

....and I was going to increase the Cilantro to 1/2 cup!!
Cilantro is like Garlic, when in doubt add more!!

jamesp Cowboy Caviar Drain and rinse: 1 can shoepeg (or white) corn 1 can black eyed peas 1 can black beans Add: Chopped red/yellow/green peppers Roma tomatoes and onions Combine and bring to a boil: 1 cup sugar 3/4 cup Vinegar 1/4 cup cooking oil Cool liquid and pour over vegetables. Let sit overnight

Uck! I agree cilantro is disgusting. It does strange things to my tongue. However, I tolerate it in the rice salad DH makes which sounds an awful lot like this alligator eye dip.

LOL. Loving the cilantro comments. When people don't like the taste of something they often speak up. Central and South American countries consume interesting plants. Jamaican (amaranth leave) callaloo . Callaloo is easy to grow(like a weed). Sorta of like turnip greens or collards also with a strong taste. Must be good for you, Jamaican's are some healthy stock. Calalloo a staple there. Taro leave callaloo is less common. Often cooked with coconut milk to sweeten it. "Callaloo (sometimes calaloo or kallaloo) is a popular Caribbean dish originating in West Africa served in different variants across the Caribbean. The main ingredient is a leaf vegetable, traditionally either amaranth (known by many local names, including callaloo or bhaaji), taro or xanthosoma. Both are known by many names, including callaloo, coco, tannia, bhaaji, or dasheen bush. Because the leaf vegetable used in some regions may be locally called "callaloo" or "callaloo bush", some confusion can arise among the vegetables and with the dish itself. Outside of the Caribbean, water spinach is occasionally used. Trinidadians, Grenadians and Dominicans primarily use taro/dasheen bush for callaloo, although Dominicans also use water spinach. Jamaicans, Belizeans and Guyanese on the other hand use the name callaloo to refer to amaranth, and use it in a plethora of dishes and also a drink ('callaloo juice'). Ornamental amaranths, not sure if the ornamentals are used for food. Ornamental industry commonly calls amaranth 'cockscomb'.

Comments regarding cilantro are funny! Especially seeing that turpentine root (aka horse radish) is suggested as a replacement! Yuck! Now garlic...or water cress...I could live with that.

Gotta love horseradish. The hotter the better! I have a jar that if you take more than about a 1/8" clump of it it'll take your breath away - literally! Had it at work & a guy scoped some out. I said you don't want that much! He says I'll be fine, I like this stuff. He took 1 bite & proceeded to gag and almost barfed in the garbage can. LMAO!
