I am so jealous. Miss making Syrup so much. It was almost like I could smell the boiling sap while watching this. Nice set up you have. Like the chimney. The sound would not work, so I have some questions. How many taps do you have? Is there a spigot on the boiling pan? About how much syrup do you get per year (know that can change with conditions and sugar content of sap).

My neighbor and his dad, with help from friends, makes over a hundred gallons in a good year. They use tubing that runs into tanks. They pump the tanks into a trailer similar to yours and take it to the sugar shack where they pump it into a large tank that gravity feeds into the evaporator. Their evaporator starts at one end and the sap runs to the other end as it gets closer to being done. They can just drain it off and keep adding more to the other end.

Thanks for sharing. I had no idea that the Box Elder tree could produce syrup. I'm going on 75 and unfortunately can't say that I have ever had the opportunity to taste REAL MAPLE syrup. Maybe someday, but i better hurry and find out where to find such a treat!

The syrup is worth the drive. It's divine.

And how long will the sap last if the weather turns warm Does Acer Negundo taste different than acer saccharinum how about Acer Rubrum What is the difference of the sap to syrup ratios Have you ever tapped birch trees does it taste different Some of the locals made birch beer by fermenting the sap, can you do the same with maple or is the sugar to concentrated What are the optimum temps to induce sap flow How many trees do you tap Has this been a good year for flow.

The trees make anywhere from zero to overflowing the 4 gallon bag. I prefer overflowing bags on every tree. Hasn't happened yet. The sap will run forever, but is only good until it begins to tint. Then it makes bitter syrup. I concentrate the sap until my hydrometer floats above the line. I don't recall the details. A gallon of sap would male just enough to get a small taste. Not enough for a pancake. The taller the chimney, the better draft I get. Good draft = good burn = good results. I finished off the first batch which netted me just over 3 gallons. That took about 175 gallons. I got hurt at work again and I might be out of business for the year. Unless I can fins a helper. DSC05799 by mrk525, on Flickr

I think your syrup is very slightly more bitter than most natural maple syrups I have had.
I LIKE THAT.
Just very slight. Very nice balance with the sweetness.
