I was wondering about that myself, but Supposedly the HOT SHOE CARVERS use them. I think they keep their bits cool with water.

I cool the Foredom bits with water also , but they are running at way less RPMs .

I would (perhaps incorrectly) that it wouldn't have the horsepower to be truly effective at carving rocks.
Hope to learn I am wrong.
