Ditto that, gemfeller ! Ham, ham and more ham. Mine was only 9.11 lbs, but even that will last awhile. Cooked my spiral cut ham with glaze from Costco last night, so Easter dinner was a day early. The ham was excellent, cooked mashed potatoes and green beans to go with it. (I won't tell you about the biscuits that we didn't need, lol.) Had planned on ham with scrambled eggs for breakfast, but actually didn't eat breakfast this morning. Don't worry, I won't starve. I love those Smoky Joe li'l Webers. We used to prepare stuffed Cornish hens, wrapped up in HD foil with butter. Four hens just barely fit the little grill. Had to get the temp of the charcoal just right, and turn them (by hand, nothing automatic) every ten minutes or so for about an hour. We used to bring the grill down to the big bay (San Diego) and cook them while we fished. There are some high class restaurants at the west end of Harbor Island, and people would park some distance away, and have to walk past us. We got a lot of comments from them about the wonderful smell. Many said it smelled better than the food they had just eaten at the restaurant! Lol.

Generator was running the pressure cooker which was filled with ham bean soup. After 11 hour power outage, electricity came back on and we had cornbread 30 mins. later.

We had an ice cream cone outside for lunch, then a cheese stick for dessert.
Dinner will be a marinated steak with veggies, rice, and salad.
It’s a beautiful day—-about 75 degrees. Doors open. Maybe we can have lunch outside tomorrow.

Lunch today was a salad, a roast beef sandwich, an apple, some mandarin oranges, and a Dr. Pepper. I need to mix it up a bit.

I had breakfast at 3:30 AM, so first lunch was at 9:30 AM. Home made chicken strips, deep fried. Broiled potato wedges. Leaf lettuce salad with tomato's, black olives and cheese. Second lunch was smoked oysters, Fritos, home made veggie/cream cheese dip and dill pickles. Supper will be another salad, broiled blue gill fillets, baked potato with toppings and steamed asparagus.

Put this in the "Recipe" section of the board. Bunch of meds next to fajitas. Those all belong to the dog, believe it or not. He’s the only one in the house on regular meds. Novolin N for his diabetes, Gabapentin and Carprofen for his arthritis. He’s 15, blind, deaf, and doesn’t get around well anymore. He may not be long for this world.
